The South Beach Diet, designed by cardiologist Arthur Agatston, is a
balanced approach for an eating plan.  A significant plus to the diet is
the direct involvement of top restaurant chefs who have created
wonderfully flavorful recipes within the guidelines of the plan.  For
instance, there are recipes from popular Miami restaurants such as  
Joe's Stone Crab and the China Grill.  Also, Dr. Agatston
recommends normal-size portions to "achieve satiety."  There is no
calorie counting.  The program's basic premise is to eat good
carbohydrates and good fats.

The Introduction Phase, Phase One, has lean meat, low-fat cheese,
eggs, nuts and vegetables.  Phase One is designed to eliminate the
sugar and starch cravings.  

Phase Two provides for gradually re-introducing healthy carbs -
whole wheat bread, brown rice, pasta, sweet potatoes, cereal and
fruit.  This diet allows ”good” carbs (whole grains, legumes,
vegetables, fruits, ) which take longer to digest and are more filling
and restricts “bad” carbs (refined grains, processed foods), which
send your blood sugar soaring.  He recommends staying on Phase
Two until you reach your goal.

Phase Three is the maintenance phase.  There are no food
restrictions, but the suggestion is now that you've seen the results
from eating good carbs and good fats, you will know to limit the
consumption of high-sugar and high-starch foods.
