For most regular cooking tasks, we use All-Clad stainless steel cookware.
It is non-reactive, heats quickly, is easy to clean, and is very durable.

For fat-free cooking, we like
Neova cookware because it is also stainless
steel and has super tight-fitting lids which keep moisture and flavors in the
food without having to use fats and/or oils.

Having the right tools makes any task easier.

This short list of cooking equipment is not meant to be exhaustive
or even scientific.   These are just the more important tools that we
don't want to be without when we cook.

The most often used appliance in our kitchens, in both our home kitchen
and when cooking for clients, is the
Vita-Mix blender.  The Vita-Mix will
make ice cream (or sometimes more importantly, non-dairy ice cream);
quick, hot, fresh, kid-friendly vegetable soups for lunches; sugar free
breakfast smoothies; and fresh green vegetable drinks, just to name a few of
its many uses.  The Vita-Mix's powerful motor is the only one we have
found that will blend tough fruits and vegetables with all the fiber intact into
smooth purees for sugar free baking.  We liked the Vita-Mix power and
quality with its 7 year warranty so much we became an affiliate.
